Apple Pie Cheesecake

You will want to make this Apple Pie Cheesecake over and over again. It’s loaded with creamy cheesecake, homemade apple pie filling and topped with a flavorful crumb topping.

Ingredients

APPLE PIE FILLING

  • 4 cup sliced peeled Apples
  • 2 tbsp Lemon Juice
  • 1/2 cup Sugar
  • 3 tbsp Cornstarch
  • 1 1/4 tsp Apple Pie Spice
  • 1 cup warm Water

CHEESECAKE

  • Refrigerated Pie Crust
  • 8 oz Cream Cheese room temperature
  • 1/4 cup Sugar
  • 1 large Egg

STREUSEL TOPPING

  • 1/2 cup Flour
  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar
  • 1/2 cup Uncooked Oats not instant
  • 1 tsp Apple Pie Spice
  • 6 tbsp cold Butter cut into small pieces

Instructions

PIE FILLING:

  • Place apple slices in bowl.
  • Add 3/4 cup water and lemon juice and toss to prevent browning.
  • In a saucepan, whisk together cornstarch and 1/4 cup water until blended.
  • Add apple pie spice and sugar. Whisk until blended.
  • Add contents of apple slice bowl to saucepan and cook over low heat until apples are tender.
  • Set aside and allow to cool.

CHEESECAKE FILLING:

  • In a large bowl, beat the cream cheese and sugar until smooth.
  • Add the egg and beat until just blended.
  • Set aside.

STREUSEL TOPPING:

  • Combine dry streusel ingredients in a large bowl and whisk together.
  • Add cold butter and work with a pastry cutter until dry mixture is fully incorporated.
  • Crumble so pieces are no larger than pea sized.
  • Set aside.

ASSEMBLE PIE:

  • Preheat the oven to 375.
  • Dock your pie crust by using a fork to pierce holes in bottom of crust.
  • Evenly spread the cheesecake batter in the prepared pie crust.
  • Spread the apple pie filling on top of the cheesecake layer.
  • Sprinkle streusel over apple pie filling.
  • Bake for 40-45 minutes until browned and bubbling.
  • Let cool on a wire rack for an hour before transferring to the fridge for another 2-3 hours.

Notes

For the BEST Apple Pie Cheesecake I suggest using homemade pie crust and homemade apple pie filling. Oh.. also it’s best to not skip the crumb topping.
