4th of July Fruit Pizza

Ingredients

  • 1 package refrigerated sugar cookie dough 1 lb
  • 8 oz Cream Cheese softened
  • 4 tbsp Powdered Sugar
  • 1 tsp Vanilla Extract
  • 8 oz Cool Whip thawed
  • 1 lb Strawberries hulled and sliced
  • 6 oz Blueberries

Instructions

  • Preheat the oven to 350.
  • Line a 9x13" baking pan with parchment paper. Crease paper to mark the size that you need to make.
  • Slice cookie dough and spread out.
  • Lift Paper out of pan and use a rolling pin to get an even layer that will just fit in the pan.
  • Use a fork to dock the the cookie crust.
  • Bake 10-15 minutes, or until edges are just turning a golden color. Do not overbake of crust may crack when cutting later.
  • Allow to cool completely.
  • In a large bowl, beat the cream cheese, powdered sugar and vanilla until blended and fluffy.
  • Fold in whipped topping.
  • Transfer half to mixture to a piping bag and set aside.
  • Remove the cooled cookie crust from the pan.
  • Evenly spread the remaining mixture over the cookie crust.
  • Place blueberries around the perimeter of the flag and place more in the corner for the blue part of the flag.
  • Build the red stripes by overlapping the strawberries.
  • Use the prepared piping bag to fill in the lines between the fruit stripes.

Notes

Lining the pan with parchment paper allows for easy removal for displaying and cutting.
