Slow Cooker Chili

Ingredients

  • 1 tbsp Olive Oil
  • 2 lbs lean Ground Beef
  • 1 large Onion peeled and diced
  • 1 Bell Pepper seeds removed and diced
  • 1 tsp minced Garlic
  • 1 Chipotle Pepper in Adobo sauce chopped
  • 2 15 oz can Dark Red Kidney Beans
  • 1 15 oz can Light Red Kidney Beans
  • 2 15 oz can Diced Tomatos
  • 1 6 oz can Tomato Paste
  • 1 cup Water
  • 1/4 cup Chili Powder
  • 1 tsp Cumin
  • 2 tbsp Sugar
  • Salt & Pepper to taste

Instructions

  • Heat oil in a large skillet over medium heat.
  • Place ground beef, onion, bell pepper and garlic and cook until browned
  • Transfer to slow cooker.
  • Add remaining ingredients (except salt and pepper) and stir.
  • Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  • Season with salt and pepper to taste.
