Carrot Bread
Carrot Bread is a sweet loaf of easy homemade bread sweetened up with grated carrots. Goes great with cinnamon cream cheese frosting on top!

Bread
- 2 cup Flour
- 1 cup Sugar
- 1 1/2 tsp Baking Soda
- 1 1/2 tsp Cinnamon
- 1 tsp Salt
- 1/2 tsp Nutmeg
- 2 1/2 cup Carrots grated
- 3 eggs
- 3/4 cup Vegetable Oil
- 1/4 cup Milk
- 1 tsp Vanilla
Frosting
- 4 oz Cream Cheese softened
- 2 tbsp Butter softened
- 1 cup Powdered Sugar
- 1/2 tsp Vanilla
- 1/4 tsp Cinnamon
Bread
Preheat oven to 350.
Line a 9x5" loaf pan with a piece of parchment paper.
In one bowl, whisk together the flour, granulated sugar, baking soda, salt, cinnamon and nutmeg. Set aside.
Thoroughly mix carrots, eggs, oil milk, and vanilla in a large bowl.
Add the dry ingredients to the wet mixture and mix until just combined.
Pour batter into the prepared pan and bake for about an hour, until a toothpick inserted in center comes out clean.
Cool bread completely in the pan.
Frosting
Cream together the cream cheese and butter in a medium bowl. Add in the vanilla and cinnamon.
Add the powdered sugar and beat on low until blended and creamy.
Remove cooled bread from pan and frost.
