Preheat oven to 350.
Grease and flour two loaf pans. Set aside.
In a medium bowl, whisk together flour, baking soda, salt and cinnamon. Set aside.
In a large bowl, whisk together eggs, vanilla, butter and sugar.
Add dry ingredients to wet and whisk to combine.
Add zucchini and stir until incorporated.
Stir in pecans until just combined.
Pour batter into prepared loaf pans.
Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean.
Allow to completely cool before slicing.
