Ingredients

  • 3-4 medium Zucchini grated
  • 2 Eggs
  • 2 tsp Vanilla
  • 1/4 tsp Salt
  • 3/4 cup Butter melted and cooled
  • 1 1/2 cup Sugar
  • 3 cup Flour
  • 2 tsp Baking Soda
  • 2 tsp Cinnamon
  • 1 cup Pecan pieces optional

Instructions

  • Preheat oven to 350.
  • Grease and flour two loaf pans. Set aside.
  • In a medium bowl, whisk together flour, baking soda, salt and cinnamon. Set aside.
  • In a large bowl, whisk together eggs, vanilla, butter and sugar.
  • Add dry ingredients to wet and whisk to combine.
  • Add zucchini and stir until incorporated.
  • Stir in pecans until just combined.
  • Pour batter into prepared loaf pans.
  • Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean.
  • Allow to completely cool before slicing.
