Slow Cooker Ham and Potato Soup
This is the BEST Slow Cooker Ham and Potato Soup you will find. You will find the perfect amount of potatoes, vegetables, ham and creaminess. It's so simple because you make this deliciousness all right in your Crock Pot!
- 8 medium Potatoes diced
- 16 oz Cubed Ham
- 3 Carrots peeled and sliced
- 1 Onion diced
- 2 stalks Celery sliced
- 1 tbsp Minced Garlic
- 1 tsp Salt
- 1/2 tsp Pepper
- 4 cups chicken broth
- 3 tbsp Cornstarch
- 3 tbsp cold Water
- 1 1/2 cups Heavy Cream you can use milk if desired
Add the potatoes, ham, carrot, onion and celery to slow cooker.
Add salt and pepper. Then add chicken broth and cook on high for 4 hours or on low 8 hours.
Lightly mash part of the potatoes to help thicken soup.
In a small bowl, combine cornstarch and water and stir until blended.
Add cornstarch mixture and stir to combine.
Add heavy cream and stir until blended.
Leave uncovered and cook on high for another 30 minutes.
