Mozzarella Stuffed Meatloaf Patties

Ingredients

  • Patties:
  • 1 lb Lean Ground Beef
  • 1 cup Bread Crumbs
  • 1 Egg
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1 tsp Oregano
  • 1 tsp Basil
  • 1 1/3 cup Shredded Mozzarella
  • Sauce:
  • 29 oz Stewed Tomatoes
  • 1/2 cup Ketchup
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/2 tsp Oregano
  • 1/2 tsp Basil

Instructions

  • Combine pattie ingredients, except cheese, in a large bowl.
  • Mix well with your hands to incorporate everything.
  • Divide mixture into 8 equal balls.
  • Form each ball into a pattie and press an indention into each.
  • Fill each with cheese.
  • Take 2 patties and stack together with cheese inside.
  • Press edges together to seal cheese inside.
  • Heat 1 tablespoon of olive oil in a large skillet over medium low heat.
  • Cook until browned on both sides (about 3 minutes per side).
  • Combine sauce ingredients in food processor or blender and run until blended.
  • Add sauce to skillet cover and simmer for 15 minutes.
