Greek Salad

Greek Salad is made with fresh, sharp ingredients that taste amazing! This is a quick and easy salad recipe packed with Mediterranean flavor.

Ingredients

Salad Dressing:

  • 6 tbsp Olive Oil
  • 1 1/2 tbsp Lemon Juice
  • 1 tbsp Red Wine Vinegar
  • 3/4 tsp Honey
  • 1 1/2 tsp minced Garlic
  • 1 tsp Oregano
  • 1/4 tsp Salt

Salad:

  • 1 English Cucumber sliced and quartered
  • 1/2 Red Onion sliced thin and cut into strings
  • 10 oz Cherry Tomatoes cut in half
  • 1 Bell Pepper remove seeds and chop (i used a little red, yellow and green in mine)
  • 3/4 cup Kalamata Olives drained and sliced
  • 4 oz Feta Cheese crumbled

Instructions

  • Combine all salad dressing ingredients in a bowl and whisk to combine.
  • Refrigerate until ready to serve.
  • In a large bowl, add cucumber, onion, tomatoes, bell pepper, and olives.
  • Add olives and feta cheese.
  • Pour dressing over top and toss to coat.

Notes

Your Greek Salad should hold up in the fridge for about 3 days! To keep it from getting too soggy, optionally line whatever container you are storing in with paper towels. If you replace the towels often, they should soak up most of the moisture your ingredients might weep.
