Mashed Sweet Potatoes

Mashed Sweet Potatoes are a seasonal spin on the classic potato recipe. This dish is delicious and savory with bacon and chives added in.

Ingredients

  • 5 medium Sweet Potatoes peeled, cut into 1 1/2" pieces
  • 8 slices Bacon cooked and crumbled divided
  • 1/2 cup Heavy Cream
  • 1/3 cup Maple Syrup
  • 1/4 cup Butter at room temperature
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1 tbsp chopped fresh Chives

Instructions

  • Peel and cut sweet potatoes in 1 1/2" pieces.
  • Put in a large pot and cover with water.
  • Bring to boil over high heat and cook until tender, about 10 minutes. Drain potatoes and return to pot.
  • Add butter and mash until smooth.
  • Combine heavy cream and syrup in a microwave safe bowl.
  • Microwave on high for 1 minute and stir. If not warm, repeat.
  • Gradually mash in maple mixture.
  • Stir in one half of the bacon, the salt and the pepper.
  • Transfer to serving dish.
  • Garnish with chives and remaining bacon.

Notes

You can substitute Half and Half for Heavy Cream.
