medium Sweet Potatoes
peeled, cut into 1 1/2" pieces
8

Bacon
cooked and crumbled divided
1/2
cup
Heavy Cream
1/3
cup
Maple Syrup
1/4
cup
Butter
at room temperature
1/4
tsp
Salt
1/4
tsp
Pepper
1
tbsp
chopped fresh Chives
Instructions
Peel and cut sweet potatoes in 1 1/2" pieces.
Put in a large pot and cover with water.
Bring to boil over high heat and cook until tender, about 10 minutes. Drain potatoes and return to pot.
Add butter and mash until smooth.
Combine heavy cream and syrup in a microwave safe bowl.
Microwave on high for 1 minute and stir. If not warm, repeat.
Gradually mash in maple mixture.
Stir in one half of the bacon, the salt and the pepper.
Transfer to serving dish.
Garnish with chives and remaining bacon.
Notes
You can substitute Half and Half for Heavy Cream.
