Ham and Bean Soup

Ingredients

  • 1 Onion diced
  • 1 Carrot diced
  • 1 stalk of Celery
  • 1 tbsp minced Garlic
  • 2 cup Cooked Ham diced
  • 32 oz Vegetable Broth
  • 1 Bay Leaf
  • 3 15 oz can Northern Beans drain and rinse
  • 1 tsp Thyme
  • 1/2 tsp Paprika
  • Salt and Pepper to taste

Instructions

  • In a large pot over medium heat, add everything but the broth.
  • Stir to mix everything well.
  • Add broth and raise temperature to medium high and bring to a boil.
  • Reduce heat, cover and simmer for 30 minutes, until vegetables are tender.
