Easy Pineapple Bars

Pineapple Bars are so easy to make. Grab a can of crushed pineapple along with some simple pantry ingredients to have a delicious topical flavored dessert!

Ingredients

  • 1/2 cup Butter softened
  • 1 cup Sugar
  • 2 Eggs
  • 1 1/4 cup Flour
  • 1/4 tsp Baking Soda
  • 1/4 tsp Salt
  • 20 oz Crushed Pineapple drained (reserve juice)
  • 1/4 tsp Vanilla
  • 1 cup Powdered Sugar
  • 5 tsp reserved Pineapple Juice

Instructions

  • Preheat oven to 350.
  • Heavily grease a 9x9" pan. Set aside.
  • Drain crushed pineapple, reserving juice. Transfer drained pineapple to cheese cloth and squeeze as much moisture as possible from pineapple. Set aside.
  • In large bowl, beat together butter, sugar, vanilla and eggs.
  • In another bowl, whisk together flour, baking soda and salt.
  • Beat dry ingredients into the butter mixture.
  • Stir in drained pineapple
  • Spread batter in prepared pan
  • Bake 25-30 minutes, until toothpick inserted in center comes out almost clean.
  • Cool in pan for 10 minutes.
  • In a small bowl, stir together powdered sugar and pineapple juice until blended.
  • Drizzle over bars and cut into squares.
