Honey Garlic Roasted Carrots

These Honey Garlic Roasted Carrots will make for a great side dish for just about any meal. We roast our carrots in the oven with honey, garlic, melted butter, and herbs. They are so easy and simply delicious.

Ingredients

  • 2 lb Carrots
  • 3 tbsp Honey
  • 3 tbsp Butter
  • 1 tsp Minced Garlic
  • 1/4 tsp Salt
  • 1/8 tsp Pepper
  • 1/8 tsp Thyme
  • 1 tsp fresh Parsley chopped (optional)

Instructions

  • Preheat oven to 425.
  • Wash, peel and chop carrots into 2" pieces.
  • In a medium bowl, add butter and microwave for 60 seconds.
  • Add honey, garlic, salt, pepper and thyme.
  • Whisk to combine.
  • Add carrots to bwl and toss to coat.
  • Place carrots on baking sheet.
  • Bake for 15 minutes.
  • Turn carrots on other side.
  • Bake for 15-20 minutes, until carrots are tender.
  • Garnish with parsley, if desired.
