Tomato Avocado Salad

Today, I am sharing this amazing Tomato Avocado Salad with Cilantro Lime Balsamic Dressing. It's super light and full of amazing flavor. Perfect for a summer side dish at your next BBQ or picnic.

Ingredients

  • 1/2 English Cucumber sliced
  • 1/4 Red Onion sliced
  • 2 Avocados peeled and diced
  • 2 Tomatoes diced
  • juice from 2 Limes
  • 1 bunch Cilantro leaves chopped
  • 2 tbsp Olive Oil
  • 1 tbsp Sugar
  • 3 tbsp Red Wine Vinegar
  • 1 tsp minced Garlic
  • 1/4 tsp Salt

Instructions

  • Place avocados, tomatoes, onions and cucumbers in bowl and set aside.
  • In a medium bowl combine lime juice, cilantro, olive oil, sugar, vinegar, garlic and salt.
  • Mix until well blended.
  • Pour dressing over vegetables and toss to coat.
