Mini Apple Upside Down Cakes

These Mini Apple Upside Down Cakes are going to make for an amazing fall dessert. They are loaded with lots of fresh apples and a cinnamon spiced sauce. Eat them as is or add on some caramel and nuts.

Ingredients

  • 5 Medium Apples I used Granny Smith
  • 1 box Spice Cake Mix
  • 3/4 cup Water
  • 1/2 cup Vegetable Oil
  • 3 Eggs
  • 2/3 cup melted Butter
  • 1 1/4 cup Brown Sugar
  • 1/2 tsp Nutmeg
  • 1/2 tsp Cinnamon

Instructions

  • Preheat oven to 350.
  • Core and slice apples into rings.
  • Pick about 20 slices and cut into quarters.
  • Dice remaining apple rings qnd set aside.
  • Spray muffin pan with non stick spray or grease.
  • In a medium bowl, combine melted butter, cinnamon, nutmeg and brown sugar and stir until blended.
  • Spoon 2 teaspoons of butter mixture into each cup.
  • Place apple ring quarters in a circle around bottom.
  • Combine cake mix, oil, eggs and water in a bowl and beat on low until incorporated.
  • Fold in diced apples.
  • Fill each cup 2/3 full with batter.
  • Bake 20-25 minutes or until toothpick inserted in center comes out clean.
  • Allow to cool in pan for 5 minutes.
  • Run a butter knife around edges of each cup and invert onto baking sheet to remove cupcakes.
