Texas Cowboy Stew

Texas Cowboy Stew is tasty and loaded with ground beef, bacon, kielbasa sausage plus beans and veggies. This hearty & delicious stew recipe is easy to make and great for feeding a crowd. Perfect for a busy weeknight dinner!

Ingredients

  • 6 slices Bacon chopped
  • 14 oz Kielbasa Sausage sliced
  • 1 lb Ground Beef
  • 1 medium Onion diced
  • 1 tbsp Minced Garlic
  • 3 tbsp Flour
  • 1 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Chili Powder
  • 1 tsp Paprika
  • 1 tbsp Worcestershire Sauce
  • 14.5 oz Diced Tomatoes 1 can with liquid
  • 15 oz Kidney Beans 1 can with liquid
  • 7 oz Diced Green Chili Peppers 1 can with liquid
  • 15 oz Whole Kernel Corn 1 can with liquid
  • 2 medium Russet Potatoes peeled and diced
  • 1 cup water

Instructions

  • In a large pot, cook bacon until brown and crispy. Move bacon to paper towel lined plate.
  • Add sliced sausage to bacon drippings in pot and brown on both sides. Move sausage to plate with bacon.
  • Add ground beef, onion and garlic to the pot and cook until the beef is no longer pink.
  • Add flour, salt, pepper, chili powder, paprika and Worcestershire sauce to the pot. Stir until spices are well distributed and cook for a minute or 2.
  • Add diced tomatoes, beans, green chilies, corn, potatoes, cooked bacon, cooked sausage, and water to the pot.
  • Bring to a boil then reduce heat, cover and simmer for 1 hour, stirring occasionally, until potatoes are tender.

Notes

Be sure you are including all of the liquid from the cans of beans, tomatoes, chilis and veggies.
If your stew seems to be a bit thick to your liking, add in a bit more water or broth.
Sprinkle a bit of fresh parsley before serving for a bit of added color.
