Steak Fajitas

Serve up this yummy sizzling Steak Fajita Recipe loaded with peppers and onions for dinner tonight. The family can loaded them up with their favorite toppings which makes everyone happy.

Ingredients

  • 2 tbsp Olive Oil
  • 1 1/2 lb Bottom Round Roast
  • 10 Medium Flour Tortillas
  • 1/2 Red Pepper
  • 1/2 Yellow Pepper
  • 1 Onion
  • 8 oz Cheddar Cheese
  • 1/2 Head Iceberg Lettuce

Marinade:

  • 1 tbsp Cornstarch
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 2 tsp Chili Powder
  • 1/2 tsp Cumin
  • 1/2 tsp Crushed Red Pepper
  • 2 tbsp Olive Oil
  • 2 tbsp Lime Juice
  • 2 tbsp Water

Instructions

  • Cut roast into steaks in place in zippper storage bag.
  • Mix together marinade ingredients until well blended.
  • Place marinade in bag making sure meat is well covered.
  • Refrigerate for at least several hours.
  • Remove stem and seeds from peppers and cut into strips.
  • Cut onions into strips.
  • Place on skillet over medium high heat and add olive oil.
  • Take each steak and place on skillet cooking about 3 minutes per side in order to get nice crust.
  • Remove steaks from pan and set aside.
  • Lower temperature to medium.
  • Shake onions and peppers in marinade bag then place in skillet.
  • Cook until mostly tender.
  • Slice steaks across the grain into thin strips and return to skillet with vegetables.
  • Shred cheese and lettuce.
  • Open tortilla bag and microwave 1 minute to heat.
