These super easy and totally adorable Valentine Raspberry Cream Filled Cupcakes with a Cupcake topper will be perfect for showing some love! The cupcake recipe starts with a boxed cake mix then filled with a yummy raspberry butter cream icing. My favorite addition to the cupcake is the mini cupcake topper. Just such a cute addition! Years ago we made this recipe for my daughters birthday, All of the guests loved them and she has always remembered these cupcakes. So I decided I would make a batch to surprise her.

The raspberry  butter cream icing in the middle is such a perfect surprise. I always use a butter knife to cone out my cupcakes. Now that I am writing this post I am going to immediately hop on over to Amazon to buy one of these Cupcake Plungers. They are super inexpensive but, I keep forgetting to get one, ha ha!

Valentine Raspberry Cream Filled Cupcakes with a Cupcake Topper- Super easy, cute and perfect to serve up for a classroom or office party.

Grab your favorite cake mix, raspberry preserves, butter, confectioners sugar and a few other items and you will be making these up in no time at all. I had my Reese’s Miniatures left over from Christmas so this was perfect for using them up!

INGREDIENTS
CUPCAKES:
1 box Devils Food Cake Mix
1/2 cup Vegetable Oil
3 Eggs
24 Reese’s Miniatures unwrapped
Candy Decorations
RASPBERRY ICING:
1/2 cup softened Butter
1 tbsp Milk
2 tbsp Raspberry Preserves
2 cup Powdered Sugar
Pink Food Coloring
WHITE ICING:
1 cup softened Butter
2 tbsp Milk
4 cup Powdered Sugar

Valentine Raspberry Cream Filled Cupcakes with a Cupcake Topper- Super easy, cute and perfect to serve up for a classroom or office party.

DIRECTIONS
Bake cupcakes according to box directions.
Allow to cool.
Make Raspberry icing by creaming butter and raspberry preserves in a bowl.
Slowly add in the powdered sugar, and milk as needed, until everything is incorporated and frosting is right consistency.
Add food color and beat to reach desired shade.
Beat for 5 minutes to make sure it is fluffy.
Transfer to piping bag.
Use a plunger or knife to cut a hole in the top of the cupcake. Remove inner cake just leaving a cap.
Pipe in icing and place cap back in cupcake.
Make White icing by creaming butter and slowly add powder sugar and milk until you reach righ consistency.
Beat for 5 minutes to make sure it is fluffy.
Transfer to piping bag.
Ice cupcakes then decorate tops with Reese’s miniature.
Ice Reese’s cup with raspberry icing.
Decorate with candy decorations.
