Hopefully this Scarecrow Bar Recipe is going to make our transition into fall easier. I love fall but the thought of summer coming to a close really has me bummed. During the fall I look forward to Fall Food & Drinks. The flavors of pumpkin, apples and other fall spices always excites me. When thinking of fall candy corns always come to mind. Our whole family has become fans of candy corns. Last week I decided to whip up these Scarecrow Bars that are topped with yummy candy corns.

This Scarecrow Bar Recipe includes peanuts and marshmallows layered on top of a crust. Yum! They will be perfect to toss into the kiddos lunch and also a great evening snack for the hubby and I. Plus they are making me less depressed about fall arriving. I am sort of anxious to break out the Halloween Decor.

These Scarecrow Bars are so simple to make. They come together in just a few minutes time. I had some cake mixes on hand and grabbed a few of the other ingredients while shopping Aldi last week.

Scarecrow Bars Recipe 2

INGREDIENTS
1 box Yellow Cake Mix
1/2 cup softened Butter
2 Eggs
3 cup Mini Marshmallows
1/2 cup Corn Syrup
1/4 cup Sugar
1/4 cup Brown Sugar
1/2 cup Creamy Peanut Butter
1 tsp Vanilla
2 cup Crisp Rice Cereal
2 cup Salted Peanuts
1 cup Candy Corn

Scarecrow Bars Recipe 3


Directions
Preheat oven to 350.

Beat cake mix and butter until combined. 
Add egg and beat until well mixed.
Press into the bottom of ungreased 13×9 baking pan. 
Bake until it sets and the edges are lightly browned (about 15 minutes).
Remove from oven and immediately sprinkle marshmallows over hot crust. 
Bake another couple of minutes until marshmallows puff up.
Remove from oven.
Combine corn syrup, sugar and brown sugar in saucepan. 
Bring to a boil over medium heat stirring constantly.
Remove from heat.
Add in peanut butter and vanilla and stir until smooth. 
Stir in cereal and peanuts. 
Spoon over marshmallow topped base and spread to cover.
Sprinkle candy corn over mixture evenly and grently press in.
Cool  and cut into bars.
