Easter is approaching way too quick. Every year I think I am going to be done with all my shopping and planning early. For some reason I am never finished on time, ha ha! For years I have wanted to make a PEEPS Sunflower Cake for Easter dessert and just have never gave it a try. I am not very good with layer cakes. I think that is the reason for putting off making this cake for so many years. For some reason making my cakes level just never works out well for me. I hate having to cut them and fit them nicely together. This past weekend I decided I would give it a try for weekend dessert since Easter is almost here. This PEEPS Sunflower Cake has pushed me to the point that I think it might be time to take a cake decorating class, lol.
PEEPS Sunflower Cake for Easter
I did have to place a few toothpicks in to hold my PEEPS on until the icing set. I was pleased that it looked so adorable. So adorable that I felt guilty cutting into it. The whole family decided they waited way too patiently to dig in. They had this cake polished off over the weekend. I think I managed to score two small pieces.
I used a boxed cake mix and made some yummy Chocolate Icing. Like I had pictured… getting this cake level was an issue for me. If you are good with cakes, this should be no problem for you at all. Just chocolate chips and some peeps wrapped around and you will have an adorable Easter PEEPS Sunflower Cake.
1 box Chocolate Cake Mix
1/3 cup Vegetable Oil
1 cup Water
1 cup softened Butter
3 1/2 cup Powdered Sugar
1/2 cup Cocoa Powder
1 tsp Vanilla
3 tsp Milk
2 packages of Yellow Peeps Chicks
1 cup Semi Sweet Chocolate Chips
Make 2 single layer cakes according to box directions.
Allow to cool completely.
Cream butter, vanilla, cocoa and powdered sugar in mixing bowl.
Slowly add milk until desired consistency icing is reached.
Ice the cakes and stack. The more level the cake, the better the effect.
Place chicks around the edge of the cake facing inward (it will take 19 of the chicks). Do not separate them.
Sprinkle chips in the middle like seeds on a sunflower.
