OK this one is not as cheap as usual, but every now and then you have to indulge! The whole family likes Montgomery Inn ribs, and I posted their “All You Can Eat” deal the other day, but with 7 of us it’s still not too practical lol. Luckily, Remke Biggs has their ribs on BOGO this week. So we decided to do it on out own.
This is my recipe and I think it works pretty well. I have also added the recipe card at the end of the post. Here are the ingredients:
2 racks of Pork Back Ribs ($16.70 from Remke/Biggs)
1 bottle Montgomery Inn Sauce ($1.99 from Remke/Biggs)
1 bag Crinkle Cut Fries ($1.89 from Aldi)
1 can Corn
Dry Rub Ingredients:
Onion Powder
Garlic Powder
Chili Powder
I typically prepare the ribs by peeling off the membrane along the back of the ribs and then cut each rack into 3 pieces. I take these and place them in a large stock pot about half filled with water and add some onion and garlic powder to get flavor into the meat and some lemon juice to help tenderize it. I will let this boil for about an hour. At this point, I cover the ribs in dry rub and transfer them to a 300 oven for about 45-60 minutes.
I then pull them out and cover in sauce and return to the oven for another 15 minutes to warm everything up. Add sides of fries and corn and you are ready to dig in. It’s not the Boathouse, but we fed all of us for less the the cost of one dinner out!
