Checkout the Gingerbread man Marshmallow Pops the kiddos and I made this morning! Yesterday the kiddos and I were out doing some shopping and seen all of the Christmas items being stocked on the shelves. With Halloween behind us we are all ready to move on to all the fun that the holiday season has for us. We were all feeling quite excited. So much so that we decided to come home and whip up a festive treat.
Gingerbread Man Marshmallow Pops
Each and every holiday season one of my favorite treats to make the kids is gingerbread cookies (they love decorating them, ha ha).. I had seen this idea a few years back about putting marshmallows together to make a Gingerbread Man. I had a bunch of Marshmallows I had picked up on sale a few weeks back that I wanted to use up and remembered this cute idea. Earlier in the week I had purchased some Wilton Gingerbread melting chips at Michaels (with a 40% off coupon of course) that I thought would coat the marshmallows and give them some extra yummy flavor. Grab a bag of marshmallows, mini marshmallows, some cinnamon sugar and chocolate if you like and have yourself a yummy treat.
INGREDIENTS (yields 6 pops)
24 Mini Marshmallows
1 1/2 cup Gingerbread Melting Chips
1/4 cup White Melting Chips
6 Lollipop Sticks
1/4 cup Sugar
1 tbsp Cinnamon
Heat Gingerbread Candy Chips in large bowl by microwaving for 30 seconds stirring and repeating until melted. Allow to cool for 2-3 minutes.
Push 2 marshmallows onto stick to form head and body.
Dip and roll or spoon to coat well.
Allow to set for several minutes.
Dip 4 mini marshmallows in melted candy and place as hands and feet (be careful as these may want to slip down the pop).
Allow to set.
Reheat chips of 30 seconds and stir.
Take pop and spread a thin additional coat of candy on front.
Sprinkle with cinnamon sugar mixture.
Allow to dry.
Heat White Candy Chips in large bowl by microwaving for 30 seconds stirring and repeating until melted.
Transfer white chocolate to small plastic bag and clip very tiny piece of corner to use for piping.
Pipe eyes, mouths, buttons and cuffs on each.
Allow to set.
These Gingerbread Man Marshmallow Pops could easily be made without the chocolate but the addition of the gingerbread flavoring just kicked these up a notch. Simple cute and easy for even the kiddos to make by themselves.
