Strawberry Poke Cake

This Strawberry Poke Cake makes for a perfect summer dessert. Like a traditional poke, this one is poked with Jell-O. I kicked it up a bit and added in some fresh strawberries, additional Jell-o, and then topped with a layer of Cool-Whip.

During the summer, having quick desserts that are perfect for an evening BBQ are a must for us. We love to grill out most evenings. Grilling on the patio is how we spend quite a bit of our family time.

My family has decided that grilling and having family time requires an after dinner dessert of some sorts, ha ha. Sometimes I will just whip up some cold treats like Strawberry Shortcake Pops or sometimes I will make them Homemade Ice Cream.

My easy go to dessert is always  a poke cake. I make OREO Poke Cake, our favorite Boston Cream Poke Cake, and quite often a light and refreshing Strawberry Poke Cake. Poke cakes are so super simple and I can usually reserve a few pieces to enjoy the next day or two with my lunch.

The entire family LOVES poke cakes so I do not get whining like “why didn’t you make x or y?”. I find when I take a poke cake to a pot luck, it is always one of the first desserts polished off. It’s sort of funny that a simple recipe can sometimes be one of the best.

The main reason poke cakes work well for our summer bbq’s is the fact that I can whip up a poke cake in the morning, toss it in the fridge, and have it ready when we are after evening bbq’ing. PERFECT!

The ingredients needed to make this Strawberry Poke Cake are simple. You will need your favorite white cake mix (yellow works too), 2 small boxes of Strawberry Jell-O, fresh strawberries and some Cool-Whip or homemade whipped cream.

INGREDIENTS
1 box White Cake Mix plus box ingredients
1 lb Strawberries
2 packages (3 oz) Strawberry Jell-O
1 cup boiling Water
1 cup cold Water
8 oz Cool Whip

DIRECTIONS
Spray a 13×9 pan with non stick spray.
Make cake according to box directions.
Allow cake to completely cool.
Using a skewer, poke small holes all over the cake, piercing all the way to bottom.
In a bowl, combine 1 package of Jell-O and 1/2 cup boiling water and stir until gelatin is completely dissolved.
Add 1/2 cup cold water, mix well and slowly pour this mixture over the entire cake.
Chill for 30 minutes.
Trim and slice strawberries.
In a bowl, combine other package of Jell-O and 1/2 cup boiling water and stir until gelatin is completely dissolved.
Add 1/2 cup cold water, mix well.
Add sliced strawberries to Jell-O and allow to cool for 5-10 minutes.
Pour this mixture over the entire cake.
Chill for 1 hour.
Spread whipped topping over cake.
Cover and refrigerate for several hours hours.
