If you are looking to serve up a easy and delish dessert this fall this Pumpkin Truffles Recipe will be perfect. Last week the hubby and I were wanting to make something sweet to enjoy with our evening coffee. We both had a sweet tooth, not really a surprise, ha ha! A frequent sweet tooth is something we really have in common. We had been brainstorming about different desserts we plan to serve up this holiday season. We quite often serve truffles but we had never made a pumpkin truffle. Hubby suggested Pumpkin Truffles. What a genius, lol! HOw could I argue with the suggestion of pumpkin, cream cheese and chocolate?
Pumpkin Truffles Recipe
These Pumpkin Cream Cheese Truffles are going to be perfect for our guests this year. We are both super excited to make them again later in the season. Super delish and not much effort for a dessert that looks and tastes perfect.
You need just a few ingredients to whip up these tasty truffles. Cream cheese, pumpkin, graham crackers, some chocolate and some pumpkin spice blend well to create a perfect truffle. I found a great deal at Remke last week for cream cheese (just $1 each). I had almost everything in the fridge and pantry.
12 oz White Almond Bark or Melting Chips
1 cup Pumpkin Puree
1 cup finely crushed Graham Crackers
1/4 cup Wilton Pumpkin Spice Melting Chips (optional)
2 oz softened Cream Cheese
1/2 tsp Pumpkin Pie Spice
Melt 2 oz white candy by heating for 30 seconds in microwave stirring and repeating until smooth.
Combine melted white chocolate, cream cheese, pumpkin and spice and mix well.
Stir in crushed graham crackers.
Put in Freezer for 30-40 minutes until firmed.
Line a baking sheet with parchment paper.
Form into mixture into 3/4 – 1″ balls and place on prepared pan.
Place in freezer for at least 20 minutes.
Melt remaining white candy by heating for 30 seconds in microwave stirring and repeating until smooth.
Dip each ball into melted candy, shake off excess and return to tray.
You can either dust the tops with crushed graham cracker or drizzle with pumpkin spice chocolate (as described below).
Place in freezer for 10 minutes.
Melt pumpkin spice candy chips by heating for 30 seconds in microwave stirring and repeating until smooth.
Transfer to zippered sandwich bag and clip corner.
Drizzle a little chocolate on top of each truffle.
