Oh my, this Peppermint Bundt Cake was a hit in my house today. Not one single person in this huge household could wait for me to snap pics of this yummy cake. They were all ready to dive in…. including myself. I just dished up the last piece to have with my very late evening coffee. I have personally been eating way too many sweets this holiday season. I think I will just have to worry about eating a bit more healthy come the new year ha ha. Who can resist a moist dark chocolate cake with a peppermint gnache? I sure the heck can not!
Peppermint Bundt Cake
If you are looking to whip up some yummy cakes during the holidays be sure to toss a chocolate bundt cake in the oven and decorate it up with some peppermint. You are going to be in chocolate heaven with just a hint of peppermint flavoring. Obviously chocolate and peppermint are always a hint during the holiday season.
1 box Dark Chocolate Cake Mix (I used Pillsbury Moist Supreme)
3 Eggs (follow box)
1 cup Water (follow box)
1/3 Cup Oil (follow box)
1 tsp Peppermint
8 oz Semi Sweet Morsels
4 oz Heavy Cream
10 Peppermint candies
Follow Box directions to mix cake for bundt pan.
Bake according to box directions.
Add Peppermint to Cake mix and blend before baking
Place morsels in microwave safe bowl.
Add heavy cream.
Heat in 30 second increments and then stir until shiny and well blended.
If mixture seems too thick add a bit more cream.
Drizzle chocolate ganache over cake allowing it to drizzle down sides.
Crush peppermint candies in food processor.
Sprinkle over chocolate ganache as a garnish.
Since this was so tasty and I have quite a few cake mixes in my pantry from all of our coupon deals I plan to make this one up for our Christmas Eve get together. I am sure it will be just as much of a hit with my guests. I usually do not make cakes for desserts during the holidays. I am excited to surprise everyone with something a bit different this year.
