With St. Patrick’s day coming up here soon, I’m starting to get an odd craving for minty desserts. Yeah, there’s plenty of mint treats to go around during the holidays around Christmas time, but St. Patty’s day always seems to bring out the best mint dessert recipes! Thankfully, we have an incredibly easy cookie recipe that any mint lovers out there are going to want to see: Mint Chocolate Chip Cookies.

Chewy Mint Chip Cookies

If you’ve never had a mint chocolate chip cookie, you’re missing out: these so easy to make and you get all the most delicious parts of a classic chocolate chip cookie! A nice crisp exterior, melty chocolate chips, and a nice chewy center- all with plenty of added mint flavor. They’re not like Thin Mints, but you might end up liking these even more!

Whether you’re looking for a fun St. Patrick’s Day dessert or an easy mint dessert, these Mint Chocolate Chip Cookies are definitely worth a try. Between the Andes mint chips and a touch of mint extract, they’re going to have plenty of mint flavor for you to enjoy! The best part? They bake in less than 20 minutes: work quick, and you can have these delicious cookies made in less than an hour. Hope you love them!

Ingredients for Recipe

For the wet ingredients, you’re going to need…
  • Butter
  • Granulated Sugar
  • Eggs
  • Mint Extract – If this seems like a lot of mint, you can substitute some of this out with vanilla extract. Remember, a little can go a long way!
The dry ingredients, meanwhile, are…
  • Flour
  • Baking Powder
  • Salt
You’ll also need the following…
  • Green Food Coloring – This is optional. We like to add a couple drops to get that pale mint green color.
  • Dark Chocolate and Mint Chips – If you can find a bag of pre-mixed chocolate and mint chips, feel free to use them- that’s what we used to do. If you can’t, just use a blend of these Andes mint chips and your favorite chocolate chips.

How to make Mint Chocolate Chip Cookies

Making these mint cookies is actually fairly simple. Here’s all you need to do:
  1. Cream together wet ingredients one-by-one, starting with the butter and sugar.
  2. Slowly mix in the dry ingredients before adding food coloring and chocolate and mint chips. Portion tablespoon-sized mounds of dough out onto lined baking sheet.
  3. Bake cookies in a 375 degree oven for 12-14 minutes. Let cool before serving.

We’ll first prep our wet and dry ingredients separately. In one bowl, whisk together the dry ingredients and set aside. In another, start by creaming together the butter and sugar.

Crack in your eggs to the butter-sugar mix and beat them in.

Add your mint extract as well before you start gradually mixing in your dry ingredients.

Keep adding the dry mix in bit-by-bit until you have a good cookie dough. If adding, put a few drops of green food coloring in now.

Now we can start adding the mix-ins to our mint chocolate chip cookies. Start with the Andes mint chips.

Next, add in your chocolate chips.

Once those are mixed in, your dough is ready! Portion the dough out into 1-inch/tablespoon-sized balls and space them out on a lined baking sheet.

All that’s left is to bake! Warm the oven up to 375 degrees before tossing the sheet with the mint cookies in. It should take about 12-14 minutes for the cookies to bake through.

Ingredients 

  • 3/4 cup Butter, softened
  • 2 3/4 cup Flour
  • 1 1/4 cup Sugar
  • 2 Eggs
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tsp Mint Extract
  • 5-6 drop Green Food Coloring
  • 2 cup Chocolate Chips
  • 1 cup Andes Mint Chips

Instructions 

  • Preheat oven to 375.
  • Line a baking sheet with parchment paper and set aside.
  • In a medium bowl, whisk together flour, salt and baking powder, Set aside.
  • Cream together butter and sugar.
  • Add eggs and mint extract, Mix well.
  • Add dry ingredients to wet and mix on low until just combined.
  • Add green food coloring and mix until color is consistent.
  • Add mint chips and stir until well distributed.
  • Add chocolate chips and stir until well distributed.
  • Drop tablespoon sized portions of cookie dough onto prepared sheet.
  • Bake for 12–14 minutes.
  • Allow to cool.
