My kiddos ran out of cookies for their lunches for the week so I just whipped up this great Lemon Springtime Cookie Recipe for them to have cookies for this week. I decide on a cake mix to make these cookies as my Spring Cake Sandwich Cookies were such a hit. The cake mix really adds that punch of flavor. While these were baking my hubby was smelling the lemon from his office. He could not believe how yummy they were smelling. If you have yet to make cake mix cookie you MUST! Ha ha. They are great and make a quick and easy cookie recipe.
Lemon Springtime Cookie Recipe
I picked up the adorable and perfect spring colored Nestle Chocolate Chips at Walmart. I did notice them at Target and at Kroger too. They just give these cookies some added spring color.
I am liking these cookies so much that I am considering making them for my Mother’s Day get together with family. They have that special taste and are just perfect. I think they are a perfect Mother’s Day Cookie.
The ingredients and prep for these Lemon Springtime Cookie Recipe are so simple. Just grab your cake mix, a couple eggs, some butter and a bag of chips.
1 box Lemon Cake Mix
1/2 cup of melted Butter
6 oz Nestle Springtime Morsels (I removed the dark morsels for mine to keep them bright)
Preheat oven to 350.
Line cookie sheet with parchment paper.
I remove dark semi sweet morsels leaving only pink and yellow.
Combine butter, eggs and cake mix.
Stir until just blended.
Stir in chocolate morsels.
Form into roughly tablespoon size balls and place on baking sheet.
Bake for 12 minutes or until cookie set.
Allow to cool several minutes on pan before moving to cooling rack.
In just a few minutes time and not much mess or cleanup you can whip up these yummy Lemon Cookies.
