Homemade Peanut Butter Granola Bars

My kiddos and I LOVE these Homemade Peanut Butter Granola Bars with Chocolate Chips. I have attempted to make homemade granola bars in the past and they came out great but not as good as this new recipe. These homemade Peanut Butter Granola Bars with Chocolate Chips are perfect for us to have for a quick breakfast in the morning or a snack too. I polished off a few yesterday with my afternoon coffee. Since the Homemade Pop Tarts Homemade Cheez It’s and the Homemade Fruit Roll Ups Recipes were such a hit, a new Homemade Granola Bars recipe was definitely needed this week.
Homemade Peanut Butter Granola Bars
I like having snacks and quick and easy foods for the kiddos to eat when they are on their way out the door for school or just to have a quick snack on hand is very handy. I usually purchase boxed granola bars but wow, the prices have risen. In my house a box is gone the second they notice them in the grocery bag from the store, ha ha. The price really adds up. Having a large batch of Homemade Granola Bars is so much more budget friendly.
These Homemade Peanut Butter Granola Bars are so simple with no baking required. I plan to have my teenage daughter make a batch weekly for lunches. They are so easy and take no time at all to whip up. I did add some Peanuts to this recipe but, they are not required. Also, you do not need to add the chocolate chips to the top either if you would like to keep them more healthy. I love my extra salted peanuts and the addition of the chocolate for myself, ha ha.
INGREDIENTS
2 cups quick oats
2 cups Rice Krispies cereal
1 cup creamy peanut butter
1/2 cup Peanuts
1/4 cup Chocolate Chips
1/2 cup honey
1/4 cup brown sugar
1/2 tsp vanilla extract
DIRECTIONS
Line 8×8″ pan with parchment paper leaving excess on each side for lifting
Combine oats, peanuts and Rice Krispies in a large bowl and mix well. Set aside.
Combine peanut butter, honey and brown sugar.
Microwave on high for 1 minute, remove and stir.
Microwave for another minute. Stir in vanilla and stir 30 seconds.
Pour microwaved mixture over dry mixture and incorporate evenly.
Pour into prepared pan. Press down to form an even layer.
Sprinkle chocolate chips evenly over top.
Refrigerate for 30 minutes.
Remove from pan using parchment paper and cut into squares.
I have been purchasing the natural creamy peanut butter from Aldi and I really like it. The price is great and it tastes great in the recipes I have made so far. This no bake option was just so simple, no pans to clean up was a HUGE plus too!
If you are like me and love peanut butter you will be dipping in this mixture before it even hit the pan, ha ha! I just kept nibbling a bit here and there. Tasty for sure.

Hi! Could I freeze these? How do you typically store them? Fridge or counter?
Hi Bethany! When I have never froze them. If you try, be sure to let me know. I usually just have them in a plastic ziploc type bag in my snack drawer. Hope that helps- Jen
