This Cheesy Tater Tot Casserole with ground beef, cream of mushroom soup, tater tots, and lots and lots of cheese makes for a great family meal. Perfect for feeding the family on a busy weeknight.
Cheesy Tater Tot Casserole
Since my kiddos love our Shepard’s Pie, I knew they would love this Tater Tot Casserole I spotted over on Food.com. I made a few modifications to make it more “our family” friendly. I loaded our casserole with ground beef, onions, cream of mushroom, spices, and lots of cheese.
This casserole turned out fabulous and there was not much cleanup because my family ate the whole pan, ha ha. They let me know it reminded them of our Shepard’s Pie, that it got two thumbs up, and it can be on our dinner list frequently.
Finding meals that stretch and also please this group is difficult so I was very happy that they liked this one. They didn’t even complain about the onions, lol.
If you are looking to make this Tater Tot Casserole, you will want to grab some tater tots, ground beef, cream of mushroom soup, cheese, onion, and a few other spices you probably have on hand.
1 lb lean Ground Beef
1 medium Onion, diced
1 tsp minced Garlic
1 tbsp Olive Oil
1/2 cup Ketchup
2 tsp Worcestershire Sauce
10 oz Condensed Cream of Mushroom Soup
1/2 cup Milk
12 oz frozen Corn
8 oz shredded Cheddar Cheese
24 oz frozen Tater Tots
Salt and Pepper to taste
Heat olive oil in a large skillet over medium heat.
Saute onion and garlic until transparent.
Add ground beef and cook until browned.
Drain excess grease,
Preheat oven to 350.
Add ketchup and Worcestershire and mix well.
Add frozen corn and stir to mix. Cook for 5 minutes.
Salt and pepper to taste.
Transfer mixture to bottom of 9×13″ baking dish.
Whisk together soup and milk until blended.
Pour soup over top of meat mixture in dish.
Arrange tater tots in an even layer over soup layer.
Evenly sprinkle cheddar cheese over tater tot layer.
Bake for 45-60 minutes until cheese is melted and tots are browned and done.
