Broccoli Cauliflower Casserole

I am a super big broccoli and cauliflower fan. My favorite soup to make is our CopyCat Panera Broccoli Cheddar Soup. I will quite often purchase the store bought veggie steamer bags for a quick side dish with our meals.

If we are having a nice holiday dinner, I like to make an easy casserole. I made this broccoli and cauliflower casserole last Thanksgiving and it was a hit. I am looking forward to making it again this year for Christmas dinner.

Nothing beats the combo of broccoli and cheese or cauliflower and cheese except both of them in one cheesy and creamy casserole. Then add on a bread crumb topping for a bit of crunch. YUMMY!

I used fresh broccoli and a head of fresh cauliflower. If you are in a pinch for time, frozen would work fine too! I also like to use sharp cheddar to cut down on the grease. You could also use a pepper jack or mild cheddar. You could prep the dish the night before and just toss it in the oven before dinner. PERFECT!

INGREDIENTS
2 bunches Broccoli
1 head Cauliflower
4 tbsp Butter
1 Onion diced
1 tsp minced Garlic
1/4 cup Flour
14 oz Chicken Broth
1/2 cup Milk
1/2 tsp Salt
1/2 tsp Black Pepper
1/4 tsp Crushed Red Pepper
8 oz Shredded Sharp Cheddar Cheese
1 tbsp melted Butter
1/3 cup Breadcrumbs

Broccoli Cauliflower Casserole makes for an excellent side dish. You will find it both cheesy and creamy. Perfect side dish.

DIRECTIONS
Break broccoli and cauliflower into small florets and remove thick pieces of the stalks.
Blanch florets in boiling water for 3-4 minutes.
Remove them from heat and set aside.
Preheat oven to 375.
Melt 4 tablespoons of butter in a large skillet over medium heat.
Cook onion and garlic 3-4 minutes until softened.
Season with salt, pepper and crushed red pepper.
Sprinkle flour over onion mixture and whisk to make sure flour is absorbed.
Cook for another minute.
Gradually add in broth, whisking constantly.
Cook until the sauce thickens.
Gradually add in milk, whisking constantly.
Combine the breadcrumbs and 1 tablespoon melted butter, and stir until blended.
Layer 1/2 of the broccoli and cauliflower in a small casserole dish.
Pour 1/2 of the sauce an top of the vegetables.
Sprinkle 1/2 of the cheese on top of the sauce.
Layer on remaining broccoli and cauliflower.
Pour remaining sauce an top of the vegetables.
Sprinkle remaining cheese on top of the sauce.
Sprinkle breadcrumbs evenly over top of the casserole.
Bake for 25 minutes or until cheese is melted and bubbling around the edges.

  2. Omg this was so good! I’ve been looking for ways to incorporate a bigger variety or veggies into mine and my hubbies dinners and this is a keeper! I added brownes ground turkey to make it more of a entire meal within itself amd used wheat flour as a substitute. We kept saying how good it was while eating. Thanks so much for sharing!

  3. I made this recipe for my Christmas dinner this year.
    I did changed your recipe slightly though.
    For a 9″X13″ casserole dish… I added 2 extra broccoli bunches, make 1 1/2 X the sauce & grated cheddar and I added 3 processed cheese slices (I love cheese) to the sauce. It was super delicious and everyone there was wanting the recipe, even my husband raved about it!
